- For the base
- ½ cup butter
- ½ cup sugar
- 1 ½ cups all-purpose flour
- For the filling
- 2 eggs
- ¾ cup caster sugar
- 14 ozs canned Pumpkin puree
- 1 ½ cups Evaporated milk
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ tsp Mixed spice
- ½ cup chopped Walnut
- To decorate
- powdered sugar
- ½ cup chopped Walnut
Preparation steps
1.
For the base: heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 23cm x 33cm|9" x 13" baking tin.

Beat the butter and sugar in a mixing bowl until soft and light. Mix in the flour and press into the baking tin. Bake for 15 minutes, until set.

For the filling: beat together the eggs and sugar until light and frothy. Beat in the pumpkin and evaporated milk, then stir in the salt, spices and walnuts.
4.
Pour over the baked pastry base and bake for about 20 minutes, until set. Leave in the tin to cool completely.
5.
Sift icing sugar over the top and scatter over the walnuts. Cut into squares to serve.
