- 6 cups russet potato (peeled and quartered)
- 1 egg
- ½ cup Smart Balance® Buttery Spread Original (melted)
- salt (to taste)
- peppers (to taste)
- ¼ tsp Nutmeg (freshly grated)
- 2 Tbsps Smart Balance® Buttery Spread Original (melted)

Preparation steps
1.
Bring potatoes to a boil until tender, drain, and let cool for 15 minutes. Meanwhile, preheat oven to 400°F.
2.
In a large bowl run potatoes through a ricer. Add egg, Smart Balance® and seasonings and mix well.
3.
Line baking sheet with parchment paper. Transfer potato mixture to a pastry bag fitted with a large star tip.
4.
Pipe the mixture on top of lined baking sheet into 8 rosettes. and brush gently with the melted Smart Balance®
5.
Bake for 10-20 minutes or until they are heated through and golden. Serve hot.
