- 1 cup butter
- ½ cup sugar
- 2 ½ cups all-purpose flour
- ⅓ cup cream (35% fat)
- 8 ozs white chocolate (chopped)
- 1 tsp peppermint extract
- 9 ozs Dark chocolate (70% cocoa solids)

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Butter a a 23 x 28cm|9” x 11” baking tin.
2.
Beat together the butter and sugar until light and fluffy.
3.
Sift in the flour and knead to a pliable dough. Press the mixture into the tin and smooth the top.
4.
Bake for 20 minutes until firm but still pale. Set aside to cool in the tin.
5.
Heat the cream in a pan and bring to a boil. Remove from the heat and pour onto the white chocolate. Stir gently until melted, then stir in the peppermint essence.
6.
Pour the chocolate over the base in the tin and chill until firm, then cut into dominoes
7.
Melt the plain chocolate in a heatproof bowl over a pan of simmering (not boiling) water.
8.
Dip half of each domino into the melted chocolate and leave to set. Dip the dominoes again until thickly coated.
9.
Spoon the remaining melted chocolate into a piping bag and pipe dots on the dominoes as in the photo. Leave to set.
