- 2 cups all-purpose flour (plus extra for dusting)
- ½ tsp Baking powder
- salt
- ¾ cup unsalted butter (softened)
- ¾ cup caster sugar
- 1 small egg
- 1 Tbsp Whole milk
- 3 Tbsps granulated sugar

Preparation steps
1.
Sift together the flour, baking powder, and salt into a large mixing bowl and set to one side. Cream together the butter and sugar in a separate mixing bowl until pale and thick and then beat in the egg and milk until well combined.

Gradually and slowly beat the flour into the creamed mixture until a dough comes together. Turn out the dough and pat down into a round before wrapping in clingfilm and chilling for 1 hour.

Preheat the oven to 180°C(160°C fan)|350F|gas 4 and line two large baking trays with greaseproof paper. Turn out the dough and roll out on a lightly floured surface to 1/2 cm|1/4" thickness.

Cut out rounds of dough using a fluted cookie cutter. Arrange them on the baking trays, spaced apart, and top with the granulated sugar. Bake for 10 - 12 minutes sandy in colour and set.
5.
Remove to a wire rack to cool. Once cool, decorate with the icing pen before serving.
