- 3 egg yolks
- 300 grams Dark chocolate (70% cocoa)
- 4 centiliters Cognac
- 1 sm cup very strong Espresso
- 400 milliliters Whipped cream
- fresh mint (for garnish)

Preparation steps
1.
Coarsely chop the dark chocolate and melt in a double boiler or heatproof bowl over a saucepan of simmering water. Remove from heat and let cool.

Whisk the eggs, egg yolks and cognac in the double boiler until light and creamy. Remove from heat and cool to room temperature.
3.
Beat the whipping cream until stiff.
4.
Stir the melted chocolate and espresso into the egg mixture, then gently fold in the whipped cream. Spoon the mixture into serving glasses and refrigerate for at least 6 hours.
5.
Rinse the mint, pat dry and remove the leaves. Garnish the chocolate mousse with mint leaves and serve.
