- 7 ozs Dark chocolate (60% cocoa solids)
- ⅓ cup unsalted butter
- ½ cup caster sugar
- 3 eggs
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- ¼ cup cocoa powder
- ½ tsp Baking powder
- 1 pinch salt

Preparation steps
1.
Melt the chocolate and butter in a large pan over a low heat, stirring. Remove from the heat and stir in the sugar until dissolved.

Beat in the eggs, one at a time, followed by the vanilla.
3.
Sift the flour, cocoa, baking powder and salt into a mixing bowl. Gradually stir in the chocolate mixture until combined. Cover the bowl and chill for 1 hour until firm.
4.
Heat the oven to 160°C (140° fan) 325°F gas 3. Line 2 large baking trays with non-stick baking paper.
5.
Roll the chilled dough into 4cm|1 1/2" balls and place well apart on the baking trays. Bake for 10-15 minutes until firm to the touch and the tops are cracked. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
