5.333 cups Cauliflower
1 Tbsp Oil
4 Tomatoes
3 ¾ cups Green beans
1 onion
1 clove garlic cloves
1 green chili pepper
1 tsp freshly grated ginger
1 tsp Turmeric
½ cup Yogurt
½ tsp flour
2 Tbsps lemon juice
salt
freshly ground Black pepper
2.333 cups Basmati rice

Preparation steps

Cook the rice according to the package instructions.

Wash and trim the cauliflower and divide into small florets. Cook in boiling, salted water for about 5 minutes, then drain, refresh in cold water and drain well.

Wash and trim the beans and cook in boiling, well salted water for about 10 minutes, then drain, refresh in cold water and drain well.
4.
Drop the tomatoes into boiling water for a few seconds, refresh in cold water, then skin, quarter, deseed and chop.

Peel and chop the onion and garlic. Wash the chili, slit open lengthways, deseed and chop. Heat the oil in a deep skillet and briefly saute the onion, garlic and ginger. Stir in the turmeric and add the cauliflower, tomatoes and beans. Mix the yogurt smoothly with the flour and stir into the vegetables. Season with salt and pepper and add lemon juice to taste and simmer over a low heat for about 5 minutes. Serve with basmati rice.
