- 1 Cucumber
- 1 handful Watercress
- 1 bunch Arugula
- 1 bunch scallions
- 2 stalks Celery
- 2 Tbsps Caper
- 200 grams Smoked fish (such as halibut, mackerel)
- 2 Tbsps White vinegar
- 2 Tbsps lemon juice
- 4 Tbsps grapeseed oil
- salt
- freshly ground peppers
Preparation steps
1.
Rinse cucumber thoroughly, cut off ends and cut lengthwise into thin strips.

Rinse watercress and arugula, trim and shake dry.
3.
Rinse scallions, trim and cut diagonally into rings.
4.
Rinse celery, trim and cut diagonally into slices.
5.
Mix vinegar with lemon juice and oil. Season with salt and pepper.
6.
Place vegetables in a bowl and crumble fish over the vegetables. Add dressing and mix gently. Season to taste and serve.
7.
Serve with brown bread, if desired.
