- 11 ozs fresh ginger
- 2 ¼ cups granulated sugar
- 1 Tbsp Glucose syrup
- superfine caster sugar (divided)

Preparation steps
1.
Peel the ginger and cut into matchsticks.
2.
Put into a pan and cover with cold water. Bring to a boil and cook for 20 minutes. Drain well.
3.
Cover the ginger in the pan with fresh cold water. Bring to a boil and drain. Repeat this process 4 times.

Put the sugar, 550 ml of water and the glucose syrup into a clean pan and stir over a low heat to dissolve the sugar. Bring to the boil without stirring.
5.
Add the ginger and boil for about 45 minutes until the ginger is translucent. Remove the ginger with a slotted spoon and place on a wire rack to dry overnight.
6.
The next day toss the ginger in caster sugar and place on a wire rack to dry for a few hours.
