1 Tbsp butter
1 Leek (finely chopped)
2 potatoes (diced)
4 cups Broccoli
4 cups vegetable stock
½ cup cream (35% fat)
salt

1 Pot, 2 Bowls, 2 Small bowls, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Peeler, 1 Fine grater, 1 Sieve, 1 Kitchen shears

Preparation steps

Slice 1 onion and finely chop the other.

Heat the oil and butter in a large pan and gently cook the onions for 5 minutes. Remove the sliced onion and keep warm for the garnish.

Add the leek and potatoes to the pan and cook for a further 5-7 minutes until beginning to soften.

Add the broccoli and cook for 3-4 minutes until just tender but still bright green. Reserve a few broccoli florets for the garnish and keep warm.

Pour in the stock and bring to a boil. Cover and simmer for about 20 minutes, until the vegetables are tender.
6.
Transfer the vegetables in batches to a blender or food processor and blend until smooth. Return to the panadd the cream and season to taste with salt and pepper.
7.
Reheat gently, but do not boil and pour into bowls. Garnish with the reserved onion, broccoli, chives and the goat's cheese.
