- ⅛ cup butter
- 4 red Bell pepper (chopped)
- 1 onion (chopped)
- 3 cloves garlic cloves (finely chopped)
- 3 cups vegetable stock
- ⅜ cup cream (48% fat)
- salt
- freshly ground Black pepper
- To garnish
- black and white peppercorns (lightly crushed)
- Baguette
Preparation steps
1.
Melt the butter in a large pan. Add the peppers, onion and garlic and cook gently for 5-10 minutes, until soft.

Pour in the stock, stirring well, then reduce the heat to low and simmer for 30 minutes. Put into a blender and purée until smooth.

Return to the pan and stir in the cream. Season to taste with salt and pepper. Heat until piping hot.
4.
Pour into bowls and sprinkle with crushed peppercorns. Serve with baguette slices.
