- For the cake
- ½ cup butter
- ½ cup caster sugar
- 2 eggs
- 1 cup self-rising flour (heaped)
- 1 tsp cinnamon
- For the apple topping
- 3 medium, eating Apple (peeled, cored and chopped)
- ½ lemon (juice)
- 1 Tbsp caster sugar
- For the cream topping
- 1 ⅓ cups cream (48% fat)
- To decorate
- ½ cup chopped Pistachio

1 Casserole dish, 1 Small bowl, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Fine grater, 1 Citrus juicer
Preparation steps
1.
For the cake: heat the oven to 180°C (160° fan) 350°F gas 4. Butter a 20cm|8" cake tin.
2.
Beat together the butter and sugar in a mixing bowl until light. Add the eggs, one at a time, with a little of the flour and mix well.
3.
Stir in the remaining flour and cinnamon until well blended. The mixture will be quite stiff.

Spoon into the tin and spread evenly.
5.
For the topping: mix together all the ingredients and spoon on top of the cake mixture.
6.
Bake for 30-40 minutes until the cake is cooked through and the apples are tender. Cool in the tin and remove when cold.
7.
For the cream topping: whisk the cream until thick. Spoon into a piping bag with a shell nozzle and pipe on top of the cake. Sprinkle with pistachios.
