For the cake
2 cups self-rising flour
1 tsp Baking powder
¼ cup Corn starch
½ cup butter (diced)
½ cup caster sugar
½ tsp Almond extract
8 ozs cooking Apple (peeled, cored and chopped)
1 lemon (finely grated zest)
1 large egg (beaten)
1 Tbsp milk
For the topping
1 cooking Apple (peeled, cored and thinly sliced)
½ cup sliced almonds
2 tsps lemon juice
powdered sugar

Preparation steps

For the cake: heat the oven to 190°C (170° fan) 375°F gas 5. Grease a deep 20cm|8" springform cake tin and line the base with non-stick baking paper.

Sift the flour, cornflour and baking powder into a mixing bowl. Rub in the butter until the mixture resembles breadcrumbs.
3.
Stir in the sugar, almond extract, apples and lemon zest.
4.
Stir in the egg and milk, until well blended. Put into the tin and level the surface.
5.
For the topping: Scatter the flaked almonds on top of the cake. Arrange the sliced apples on top of and sprinkle with lemon juice.
6.
Bake for 30-40 minutes, until the apples are soft and the cake is browned. Leave to cool in the tin, then place on a wire rack to cool completely.
7.
Sift over a little icing sugar just before serving.
