- ½ cup Tapioca
- 1 ⅔ cups Coconut milk
- ⅜ cup Coconut cream
- 3 Tbsps sugar

Preparation steps
1.
Put the tapioca in a bowl, cover with hot water and leave to soak for around 10 minutes.

Bring the coconut milk to the boil with the coconut cream and the sugar. Turn the hob to its lowest setting and add the tapioca. Simmer over a low heat for around 20 minutes, stirring, until the tapioca is transparent. Remove from the heat and leave to cool.
3.
If the mixture is too thick, stir in a little water before serving.
