- 2 garlic cloves
- 600 grams carrots
- 200 grams starchy potatoes
- 2 Tbsps vegetable oil
- 1 ¼ liters Vegetable broth
- 1 red chili pepper
- 50 milliliters Whipped cream (at least 30% fat content)
- 4 mint (for garnish)

Preparation steps

Peel the onion and garlic and chop finely. Peel, rinse and dice the carrots and potatoes. In a saucepan, heat the oil and sauté the onion and garlic until translucent, 1-2 minutes. Add potato and carrot cubes and sauté 3-5 minutes longer. Pour in the broth and cook over medium heat until soft, 20-25 minutes.

Puree with an immersion blender and season with salt, pepper and turmeric. If necessary, add some more broth. Rinse chile pepper, halve, remove seeds and finely chop. Whisk the cream until slightly thickened. Pour the soup into soup bowls and serve garnished with one dollop of cream, a few chile pepper cubes and a mint leaf.
