- For the borage soup
- 1 kilogram Borage Leaf
- 1 small onion
- 3 garlic cloves
- 1 Tbsp olive oil
- 150 milliliters white wine
- 500 milliliters Vegetable broth
- 2 Tbsps Whipped cream
- salt
- freshly ground peppers
- grated Parmesan (as desired)
- For garnish
- Arugula
- Dill flower
- Borage flower

Preparation steps

For the borage soup: Rinse the borage leaves and cut into strips. Peel and finely chop the onion and garlic.
Heat the olive oil in a pot. Add the onion and garlic, and cook until translucent. Add the borage and cook until just wilted. Stir in the wine and puree until smooth. Add the vegetable stock and simmer for 5 minutes. Stir in the cream, and season with salt and pepper to taste. Stir in Parmesan to taste.

For garnish: Ladle the soup into bowls and garnish with arugula, dill flowers and borage flowers.
