500 grams white Asparagus
1 Tbsp lemon juice
1 tsp sugar
salt
20 grams butter
30 grams Pastry flour
100 milliliters Whipped cream
peppers
1 tsp pink peppercorns
Lemon thyme (for garnish)

Preparation steps

Rinse, peel and cut the woody ends off of the asparagus. Bring 1 liter (approximately 4.5 cups) of water, the lemon juice, sugar and 1 teaspoon of salt to a boil. Add the asparagus. Cook for about 20 minutes. Pour through a sieve and collect the water. Cut the asparagus into pieces.

Melt the butter. Stir in the flour. Pour in the asparagus water. Add half of the asparagus pieces. Puree finely and pour through a sieve. Stir in the cream and the remaining asparagus. Season with salt and pepper.

Crush the peppercorns with a knife. Add the peppercorns and thyme to the soup. Serve immediately.
