- 3 ⅓ cups Hokkaido pumpkin (diced)
- 1 onion
- 1 clove garlic cloves
- 1 tsp fresh ginger (chopped)
- 2 Tbsps butter
- 3 ½ cups Vegetable broth
- ⅞ cup cream
- 2 Tbsps Walnut (chopped)
- salt
- cayenne pepper
- brown sugar
- Chili thread (dried)

Preparation steps

Peel the pumpkin, remove the seeds and dice. Peel the onion and the garlic and finely chop. Saute the pumpkin, onion, garlic and ginger in hot butter, then pour in the vegetable broth and cream. Simmer over a low heat for about 30 minutes. In the meantime roughly chop the walnuts and toast in a dry, hot skillet.

Puree the soup, season with salt, cayenne pepper and sugar and spoon into 4 bowls. Garnish with the chopped walnuts and chili threads and serve.
