For the filling
500 grams Ground beef
2 stale White rolls
2 Tbsps chopped shallots
50 grams Smoked bacon (diced)
2 Tbsps butter
1 Tbsp fresh marjoram (chopped)
1 tsp sharp Mustard

For the dough
600 grams cold potatoes (cooked)
50 grams Pastry flour
30 grams Smoked bacon (diced)
1 egg yolk
salt
freshly ground peppers
Nutmeg
clarified butter (for frying)

Preparation steps

1.

For the filling: Heat some butter in a pan and cook shallots. Knead shallots with all other filling ingredients and shape into two equally long rolls, about 2.5 cm (approximately 1 inch) in diameter.

For the dough: Peel potatoes and squeeze through a ricer. Knead potatoes with flour, bacon and egg yolks. Season with salt, pepper and nutmeg.

Roll potato dough onto a floured surface and form two rectangles, about 7 cm (approximately 2 3/4 inches) wide and the length of the meat rolls. Brush dough with egg white, put meat rolls on each piece of dough, wrap and firmly press edges together.

Heat remaining butter in a saucepan and cook rolls until golden brown on all sides. Preheat an oven to 200°C (approximately 400°F) and bake rolls for about 20 minutes. 

5.

Remove rolls and allow to cool. Slice 1 cm (approximately 1/3 inch) thick slices and secure with a toothpick, as desired. Serve immediately.
