- ½ tsp salt

- 2 Tbsps lemon juice
- ½ cup unsalted butter
- 1 cup sugar
- 1 egg
- 1 tsp vanilla extract
- For the glaze
- 2 cups powdered sugar
- 2 Tbsps finely chopped Candied lemon
- ⅓ cup lemon juice

Preparation steps
1.
For the biscuits: heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 baking trays with non-stick baking paper.

Mix together the flour, bicarbonate of soda, salt and lemon zest and set aside.
3.
Beat together the butter and sugar in a mixing bowl until light and fluffy.

Add the egg, vanilla, and lemon juice and beat until combined. Beat in the flour mixture.
5.
Drop tablespoons of the mixture 2.5cm|1" apart on the baking trays.
6.
Bake for 15-20 minutes, until golden. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
7.
For the glaze: sift the icing sugar into a bowl and whisk in the lemon peep and lemon juice until thick enough to coat the back of a spoon.
8.
Drizzle over the biscuits and leave to set.
