2 ½ cups all-purpose flour
1 tsp Baking powder
½ cup granulated sugar
¼ tsp salt
½ cup butter (chopped)
1 egg
In Addition
2 tsps grated Lemon peel
3 drops yellow Food coloring
2 tsps grated Lime zest
5 drops green Food coloring
2 tsps grated Orange peel
3 drops yellow Food coloring
3 drops red Food coloring
To Decorate
1 cup powdered sugar
2 Tbsps lemon juice
Silver Sugar pearls (as desired)
Decorative sugar crystals (for sprinkling)

Preparation steps

In a large bowl, combine flour, baking powder, sugar and salt. Chop the butter in using a dough scraper, add the egg and quickly knead the dough into a smooth dough. Divide the dough into 3 equal portions.

In three separate bowls, combine the citrus peels and food coloring. Knead a citrus mixture into each of the dough portions and shape the dough into a ball. Cover each ball in plastic wrap and chill in the refrigerator for 30 minutes.

Preheat the oven to 350º F. Line two baking sheets with parchment paper.

Roll out each dough portion between two sheets of plastic wrap to a thickness of 1/4-inch. Cut out cookies using a 2-inch round fluted cutter and place on prepared baking sheets.

Bake for 7 to 10 minutes or until golden brown. Transfer cookies to a wire rack to cool completely.

Combine confectioners' sugar and lemon juice, mixing until a thick, smooth consistency is achieved. Spread or pipe icing on cookies; decorate as desired. Finish with sugar pearls and decorative sugar.
