- Dressing
- 1 cup plain Yogurt
- 1 Cucumber (peeled, seeded and diced)
- 1 Tbsp olive oil
- 1 Tbsp lemon juice
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- 1 ½ tsps fresh Dill
- 1 ½ cloves garlic cloves (peeled)
- Salad
- 2 cups blanched Green beans (trimmed and cut)
- 1 red pepper (sliced thin)
- 1 cup sliced Mushrooms
- ¼ cup Chives (chopped)
- 2 hard boiled eggs (sliced into quarters)
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- thyme (for garnish)

In a food processor, combine yogurt, cucumber, olive oil, lemon juice, salt, pepper, dill and garlic. Process until well-combined. Refrigerate for at least one hour for best flavor.

Combine green beans, pepper, mushrooms and chives in a medium bowl. Toss gently to mix. Transfer to a platter and top with sliced egg. Season with salt and pepper. Garnish with thyme and drizzle dressing on top to serve.
