1 cup plain Yogurt
1 Cucumber (peeled, seeded and diced)
1 Tbsp olive oil
1 Tbsp lemon juice
kosher salt (to taste)
freshly ground Black pepper (to taste)
1 ½ tsps fresh Dill
1 ½ cloves garlic cloves (peeled)
Salad
2 cups blanched Green beans (trimmed and cut)
1 red pepper (sliced thin)
1 cup sliced Mushrooms
¼ cup Chives (chopped)
2 hard boiled eggs (sliced into quarters)
kosher salt (to taste)
freshly ground Black pepper (to taste)
thyme (for garnish)

Preparation steps

In a food processor, combine yogurt, cucumber, olive oil, lemon juice, salt, pepper, dill and garlic. Process until well-combined. Refrigerate for at least one hour for best flavor.

Combine green beans, pepper, mushrooms and chives in a medium bowl. Toss gently to mix. Transfer to a platter and top with sliced egg. Season with salt and pepper. Garnish with thyme and drizzle dressing on top to serve.
