For the cucumber soup
1 garlic clove
2 scallions
2 Cucumber
1 tsp Mustard
½ lemon (juiced)
salt
freshly ground pepper
1 tsp sugar
½ tsp ground Cumin
garnish
black Sesame seeds
Chervil
For the tuna tartar
400 grams Tuna (sushi quality)
2 Tbsps freshly chopped cilantro
1 shallot
6 Tbsps sesame oil
2 lemons (juiced)
4 Tbsps light soy sauce
salt
freshly ground pepper
4 thin Ciabatta (toasted)
black Sesame seeds (for garnish)

Preparation steps

For the cucumber soup, peel and chop the garlic. Trim, rinse and chop the scallions.

Peel the cucumbers, halve lengthwise, remove the seeds with a spoon, and cut into cubes.

Puree the garlic, scallions and cucumber together with an immersion blender. Pour as much water (about 250 mL) (approximately 1¼ cups) until the soup has the desired consistency. Stir in the mustard, lemon juice, sugar and cumin, and season with salt and pepper. Refrigerate the soup until ready to serve and serve garnished with sesame seeds and chervil.

For the tuna tartar, cut the tuna and shallot into small cubes, and mix with with lemon juice, coriander, sesame oil and soy sauce. Season with salt and pepper.

Place the tuna tartar on the ciabatta slices, sprinkle with sesame seeds and serve with the cucumber soup.
