2 eggs
½ cup caster sugar
1 cup milk
1 ½ cups all-purpose flour
3 Tbsps cocoa powder
2 tsps Baking powder
4 Tbsps Chocolate spread
4 Tbsps sugar sprinkles

Preparation steps

1.
Put the eggs and sugar into a bowl and using an electric hand mixer whisk until thick and creamy. Stir in the milk, and then sieve over the flour, cocoa powder and baking powder. Fold in until well combined.
2.
Heat a non-stick frying or griddle pan. Drop 3-4 tablespoonfuls of the mixture into the pan. Cook for 30–40 seconds or until bubbles appear on the surface of the mixture.
3.
Flip the pikelets over and cook for a further 30 seconds or so. Remove and cook the remaining mixture in the same way.
4.
Spread a little chocolate spread on each pikelet, scatter over the sugar sprinkles and serve.
