½ vanilla Sponge cake
1 cup prepared buttercream
To decorate
2 cups Dark chocolate (chopped)
cup double cream
1 cup sugar sprinkle

Preparation steps

For the pops: Make the vanilla sponge cake. Once cool, turn out of the tin and crumble into a food processor. Pulse until you have cake crumbs.

Tip into a mixing bowl and add the prepared buttercream, mixing well until a cake dough forms. Shape into 18 pops and set aside. Skewer with the lollipop sticks and set upright in a styrofoam box. Chill for 30 minutes.

To decorate: Place the chocolate in a heatproof bowl and warm the cream in a saucepan until almost boiling. Pour the hot cream over the chocolate and leave for 1 minute.

Stir until melted and even. Dip the pops into the melted chocolate, turning to coat. Sit upright in a styrofoam box and sprinkle their tops with sugar sprinkles.

Chill for 30 minutes before serving.
