Preparation steps
1.
Preheat the oven to 180°C (160° fan)350°Fgas 4. Reduce the coca cola in a saucepan set over a moderate heat until syrupy.
2.
Place the ham hock on trivet sat inside a large casserole dish. Score a diamond pattern on the outside fat and stud with cloves.
3.
Brush with some of the reduced cola and brush with the mustard, seasoning with salt and pepper at the same time.
4.
Cover the dish with a lid and bake the ham for 1 hour 30 minutes and then remove the lid.
5.
Continue to bake for another 1 hour 20-30 minutes, basting with more cola, until the ham registers at least 71°C|160°F on a meat thermometer.
6.
Remove from the oven and leave to cool before slicing and serving.
