- 7 ozs plain Dark chocolate (chopped)
- ⅓ cup salted butter (cubed)
- ½ cup caster sugar
- 3 eggs
- ¼ tsp peppermint extract
- 2 cups all-purpose flour
- 3 Tbsps cocoa powder
- ½ tsp Baking powder
- 1 ¼ cups powdered sugar (sieved)

Preparation steps

Put the chocolate and butter into a pan and heat gently, stirring, until smooth. Remove from the heat and stir in the sugar. Stir for 2–3 minutes until the sugar has dissolved. Add the eggs one at a time, beating well after each addition. Add the mint flavouring.

Sieve the plain flour, cocoa powder and baking powder together. Add the flour mixture to the chocolate mixture a little at a time, mixing well. Cover the dough with plastic wrap and chill for at least an hour until firm.

Heat the oven to 160°C/140°C fan/325°F/gas 3. Grease two large baking sheets. Put the icing sugar into a bowl. Using a small ice cream scoop or spoon, scoop up the dough and shape into small 5cm balls.

Drop each ball into the icing sugar and roll it around until thickly coated. Place on the baking sheet about 5 cm apart. Bake in the oven for 10–15 minutes until the tops feel slightly firm when touched. Leave to cool for 2–3 minutes before removing to a cooling rack.
