Ingredients

- Ingredients
- 2 Tbsps fresh rosemary
- 4 strips Orange peel (2-inches / 5 cm long)
- ½ cup olive oil
- 6 Tbsps honey
- 6 Tbsps Orange juice
- 3 Tbsps fresh lemon juice
- 2 cloves garlic cloves (peeled and pressed)
- salt (to taste)
- freshly ground Black pepper (to taste)
- 6 cups boneless Pork (trimmed and cut into cubes)
- 2 large Red onions (peeled and cut into wedges)
Preparation steps
1.
Combine rosemary and orange peel in large mixing bowl. Using the back of a wooden spoon, press down on the mixture to release oils. Add olive oil, honey, orange juice, lemon juice, and garlic. Season with salt and pepper. Add pork, stirring to coat with marinade. Cover; chill in the refrigerator for at least 3 hours.
2.
Preheat grill to medium heat. Thread pork onto 12 metal skewers, sliding an onion wedge between every two or three cubes. Season pork with salt and pepper.
3.
Transfer marinade to small heavy saucepan; bring to boil, stirring frequently. Grill pork until cooked through, turning frequently and brushing occasionally with marinade, about 12 to 14 minutes. Arrange skewers on platter and serve.
