¼ cup Molasses
1 large egg
2 ¼ cups unbleached all-purpose flour
½ tsp ground cloves
1 tsp ground cinnamon
1 tsp freshly grated ginger
2 tsps baking soda
¼ tsp salt
granulated sugar (for rolling)

Before measuring molasses, spray the measuring cup with cooking spray; the molasses won’t stick to the sides of the cup.

Preparation steps

1.
Preheat oven to 375º F. Lightly grease baking sheet with non-stick cooking spray.

In a large bowl, using an electric mixer on medium speed, beat brown sugar, shortening, molasses and egg together until light and fluffy.. Stir in all remaining ingredients, except granulated sugar.
3.
Shape dough by rounded teaspoonfuls into balls. Dip tops into granulated sugar and place balls, sugar side up, on prepared baking sheet, about 3-inches apart.
4.
Bake 10 to 12 minutes or until just set. Remove from cookie sheet immediately to wire rack to cool. Serve.
