- For the biscuits
- ⅔ cup unsalted butter
- ½ cup light brown sugar
- 3 Tbsps Golden syrup
- 3 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp Ginger powder
- 1 tsp ground cinnamon
- 1 pinch salt
- To decorate
- 1 cup powdered sugar
- 1 Tbsp hot water
- red and green Chocolate bean

Product recommendation
Soak wooden lollipop sticks in cold water for 30 minutes before using, to avoid burning.
Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Line a large baking tray with non-stick baking paper.
2.
Melt the butter, sugar and syrup in a pan. Remove from the heat and allow to cool slightly.
3.
Sift the flour, bicarbonate of soda, spices and salt into a mixing bowl. Stir in the butter mixture and mix to a firm dough. Allow to stand for 5 minutes.
4.
Roll out the dough on a lightly floured surface Cut out Christmas tree shapes using cookie cutters or a card template, re-rolling the trimmings and rolling again. Press the soaked (see note) lollipop sticks into the the dough, to come about 1/3 of the way into the 'trees'.
5.
Place on the baking tray and bake for 10-12 mins until golden. Cool on the baking tray for 10 minutes, then place on a wire rack to cool completely.
6.
To decorate: sift the icing sugar into a bowl and stir in the hot water to make a smooth coating icing.
7.
Spread the icing on the biscuits and decorate with chocolate beans before the icing sets.
