- 32 ozs Brussels sprouts (halved)
- salt
- 1 clove garlic cloves (finely chopped)
- ⅞ cup cream (48% fat)
- 1 egg
- 2 Tbsps chopped, mixed Fresh herbs
- freshly ground peppers
- grated Nutmeg
- 3 ½ ozs Bacon (sliced and cut into strips)
- ½ cup Walnut

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Butter 4 individual gratin or baking dishes.
2.
Cook the Brussels sprouts in a pan of boiling salted water for about 5 minutes until just tender. Drain and refresh under cold running water, then drain well.
3.
Mix together the garlic, cream and egg until blended. Stir in the herbs, salt, pepper and nutmeg to taste.
4.
Put the Brussels sprouts in the dishes and sprinkle with the bacon and walnuts. Pour the cream mixture over the top.
5.
Bake for about 20 minutes until bubbling and piping hot. Serve immediately.
