- For the dough
- 1 cup all-purpose flour (heaped)
- 0.333 cup Corn starch
- 0.333 cup cocoa powder
- 1 tsp Baking powder
- ½ cup soft butter (scant)
- ¾ cup powdered sugar
- 1 tsp Vanilla sugar
- ½ tsp vanilla extract
- 1 egg
- ⅜ cup Buttermilk
- For the filling
- 1 egg white
- ½ tsp Baking powder
- 0.333 cup sugar
Preparation steps

Heat the oven to 170°C (160°C in a fan oven), 325°F, gas 3. Line two baking trays with baking parchment.

Mix the flour with the cornflour, cocoa and baking powder. Beat the butter until creamy and sieve over the icing sugar. Add the vanilla sugar and vanilla extract and mix. Beat in the egg and buttermilk. Sieve the flour mixture over and beat well.

Fill the dough into an piping bag with a round nozzle and make approx. 30 dough circles on the baking trays. Bake for approx. 15 minutes. Remove from the oven and let cool on a wire rack.

For the filling, beat the egg white with the baking powder and a pinch of salt for at least 5 minutes until stiff. Place the sugar with 80 g water in a pan and bring to the boil, stirring. Cook for approx. 10 minutes until thickened, stirring all the time.

Continue to beat the egg white on the slowest speed and slowly pour in the hot sugar syrup. Continue to beat for a further 5 minutes. Fill into a piping bag with a round nozzle and cover 15 whoopies. Top with the remaining whoopies.

If wished, the edges may be slightly browned over a bunsen burner before serving.
