- 150 grams Yogurt (0.1% fat)
- 1 Tbsp grated Lime zest
- 2 Tbsps Lime juice
- 4 Tbsps powdered sugar
- 2 sheets white gelatin
- 8 Cape gooseberries
- 8 Kumquat
- 1 Sharon fruit
- 12 Puffed rice

Preparation steps
1.
In a bowl, mix together the yogurt, lime zest, juice and 3 tablespoons powdered sugar.

Soak gelatin in cold water for about 10 minutes, then dissolve dripping wet in a small pot. Stir 2 tablespoons of the lime cream into the gelatin, then stir the gelatin mixture into the remaining cream and refrigerate 30 minutes.

Top the chocolate puffed rice squares with a little lime cream and refrigerate until set, about 30 minutes. Open the papery covering of the gooseberries carefully and turn upward. Rinse the kumquats and cut crosswise into slices. Rinse the persimmons and cut into thin wedges.
4.
Smooth the top of the lime cream and divide among plates, arrange the fruits around and sprinkle with remaining sugar.
