- ⅔ cup cream (48% fat)
- ¼ cup sugar
- 1 Vanilla bean (seeds)
- 7 ozs plain Dark chocolate (80% cocoa solids, chopped)
- 9 ozs Milk chocolate (35% cocoa solids; chopped)
- 1 cup unsalted butter (scant)
- 1 ½ cups chopped Pistachio
Preparation steps
1.
Line a rectangular or square tin with non-stick baking paper.
2.
Place the cream, sugar and vanilla seeds in a pan and bring to a boil. Add all the chocolate and allow to melt and cool slightly.
3.
Beat the butter until soft and gradually stir into the chocolate mixture.
4.
Pour the chocolate into the tin, about 1.5-2cm|1/2"-3/4" thick. Chill until firm enough to handle.
5.
Roll pieces of the mixture into small balls and roll in the pistachios.
