- For the cupcakes
- ¼ cup cocoa powder
- ⅜ cup boiling water
- ¼ cup butter
- ½ cup caster sugar (superfine)
- 1 egg (beaten)
- ⅔ cup all-purpose flour
- ½ tsp baking soda
- ¼ tsp Baking powder
- For the topping
- ¾ cup unsalted butter
- 2 ¾ cups powdered sugar
- 2 tsps lemon juice
- 6 tsps hot water
- To decorate
- red, white, and blue sugar sprinkles

For the cupcakes: heat the oven to 180C,350F, gas 4. Place paper cases in 14 bun hole tins.

Put the cocoa and boiling water into a small bowl and mix to a smooth paste. Allow to cool.

Beat the butter and sugar in a mixing bowl until soft and light. Beat in the egg.

Sift in the dry ingredients and stir until blended. Stir in the cocoa paste and mix until smooth.

Spoon the mixture into the paper cases and bake for about 20 minutes until risen and springy to the touch. Remove from the tins and cool on a wire rack.
6.
For the topping: beat the butter until soft. Sift in the confectioners' sugar and stir well. Beat in the lemon juice and hot water until the mixture is smooth.
7.
Spoon into a piping bag and pipe swirls on top of the cooled cakes.
8.
Scatter the sugar stars over the top.
