Ingredients

For the waffles
¼ cup butter
¼ cup sugar
3 eggs
¾ cup all-purpose flour
1 tsp Baking powder
2 Tbsps cocoa powder
cup milk
2 tsps kirsch (or cherry brandy)
For the cherries
1 jar Sour cherry (approx. 350 g drained weight, reserving the liquid)
2 Tbsps Vanilla sugar
2 tsps Corn starch
For the cream
1 ⅔ cups whipping cream
¼ oz whipped cream stabilizer
¼ cup grated Chocolate
cup sliced almonds (toasted)

Preparation steps

1.
Cream 50 g butter together with the sugar and a pinch of salt. Add the eggs one at a time, beating after each addition. Mix together the flour, baking powder and cocoa and gradually stir into the mixture, alternating with the milk.

Heat the waffle iron and brush with a little of the remaining butter. Add around a third of the batter and fry. Make 3 waffles in this way. Remove, brush with a little kirsch and leave to cool.

Bring the liquid from the jar of cherries to the boil with the vanilla sugar. Mix the cornflour with 2 tbsp water until smooth and use to thicken the juice. Add the cherries, take off the heat and leave to cool.

Whip the cream with the stabiliser until stiff. Divide into two and mix the chocolate through one half of the cream.

Put a waffle on a cake plate. Top with the cherries, reserving around 10 for garnish. Place a second waffle on top and spread with the chocolate whipped cream. Finish with the third waffle. Spoon the remaining whipped cream into a piping bag with a large star nozzle and use to decorate the top of the waffle torte. Garnish with the reserved cherries and serve sprinkled with flaked almonds.
