- For the dough parcels
- 9 ozs Wheat starch
- 5 ozs shrimp (chopped)
- ½ tsp freshly grated ginger (grated)
- 1 tsp sesame oil
- For the soup
- 3 ½ cups vegetable stock
- 1 green chili pepper (mild, diced)
- 2 Tbsps Chinese Chives
- 1 mini Bok Choy (roughly chopped)
- Rice vinegar
Preparation steps

Make a smooth, soft dough by mixing together the wheat starch and water (added in tiny amounts whilst kneading). Roll out thinly and cut out circles approx. 8-10 cm in diameter.

To make the filling, mix together the shrimps, ginger, sesame oil, salt and a pinch of sugar. Place the filling in the middle of the circles and fold them closed. Create a zigzag fold by folding a little of the dough circle over the filling and then folding the next part over so that it overlaps the first fold.

Bring the stock to the boil. Add the chilli pepper, chives and bok choy and simmer. Place the dough pacels in the soup and cook for about 8 minutes. Season with rice vinegar and salt and serve.
