- 18 ozs ripe Tomatoes
- ½ Cucumber (peeled and finely diced)
- 1 red Bell pepper (finely diced)
- 2 spanish onions (quartered)
- 1 Tbsp white wine vinegar
- 2 cloves garlic cloves (crushed)
- 1 tsp sugar
- 1 tsp sweet paprika
- 1 Tbsp Almond flour
- 2 Tbsps olive oil
- salt

Preparation steps
1.
Put the tomatoes into a bowl and cover with boiling water. Stand for 1 minute then remove the skins.
2.
Set aside 1 tablespoon of the cucumber and 1 tablespoon of the pepper for garnishing.
3.
Put all the ingredients into a blender and blend until smooth, adding enough cold water to make the required consistency.
4.
Season with salt and pepper - you may also want to add more sugar.
5.
Chill for at least 1 hour, then serve in glasses with the reserved diced cucumber and red pepper as a garnish.
