1 garlic clove
2 red chili peppers
2 Tbsps pink peppercorns
1 Tbsp sunflower oil
150 milliliters Vegetable broth
150 milliliters Whipped cream
2 centiliters Cognac
salt
1 pinch brown sugar

Preparation steps

Peel and finely chop the shallot and garlic. Rinse, trim, and slice the chilis. Set aside some of the chilis and the peppercorns for garnish. Heat the oil in a pan, and sauté the shallot, garlic, chili, and peppercorns. Deglaze with the broth, and bring to a boil. Mix in the cognac and the cream, and simmer gently for 10 minutes stirring occasionally. Puree the sauce, then simmer until thickened. Season to taste with salt, sugar, and lemon juice. Garnish the sauce with the remaining chili and peppercorns, and serve.
