- 300 grams Rice
- salt
- freshly ground peppers
- 2 finely chopped shallots
- 1 garlic clove
- 1 bay leaf
- 1 Tbsp Tomato paste
- 1 sm jar peeled Tomatoes
- 2 Tbsps olive oil
- 4 Chicken breasts
- vegetable oil
- 4 Tbsps Basil pesto (from a jar)
- 1 pc Parmesan

Preparation steps
1.
Rinse rice and boil with twice the water that the package requires. Season with salt and cook (covered) over low heat for about 20 minutes, or until all the water is absorbed.
2.
Sweat the shallot in olive oil until translucent. Press the garlic. Add the garlic, bay leaf, chopped tomatoes and tomato paste and mix well. Season with salt and pepper. Simmer for approximately 15 minutes, stir in the rice and simmer for a few more minutes.
3.
Brush the chicken breast fillets with a little oil and season with salt and pepper. Grill on each side for 4-5 minutes.
4.
Spread rice in bowls, add chicken and a dollop of pesto. Add parmesan. Serve.
