Chicken with Green Vegetables

- 1 chicken (approx 1.4 kg)
- 1 handful Lemon thyme
- 4 Tbsps olive oil
- 1 garlic clove
- 150 grams Snow peas
- 150 grams Peas
- 1 Zucchini
- 100 milliliters dry white wine
- Lemon thyme (for garnish)
Preparation steps
Preheat oven to 180°C (approximately 350°F) upper and lower heat.
Rinse chicken, pat dry and divide into 6-8 pieces. Trim thyme and add to oil. Peel garlic, chop finely and add to thyme oil. Brush and season chicken pieces with salt and pepper. Put in ovenproof dish and roast in oven for about 15 minutes.
Meanwhile, rinse, trim and drain snow peas. Rinse peas and drain. Rinse, trim and chop zucchini. Put some thin slices aside to garnish.
Remove chicken from oven and take from dish. Add wine to zucchini cubes. Place chicken pieces with skin side up on them and sprinkle with remaining vegetables. Add salt and pepper, and cook for about 20 minutes in oven. If necessary, add water.
Season and serve garnished with zucchini ribbons and sprigs of thyme.
