- 4 boneless Chicken breasts (skin on)
- 2 Tbsps Oil
- 3 cups Mushrooms (chopped)
- 1 garlic clove (finely chopped)
- 4 shallots (finely chopped)
- 1 ¼ cups fresh Mozzarella (diced)
- 1 tsp thyme
- ¼ tsp salt
- ½ tsp Black pepper

Preparation steps
1.
Heat the oven to 200C |Gas mark 6. Grease a baking tray.

Using a sharp knife cut a small pocket on one side of each chicken breast, being careful not to cut all the way through. Set aside.
3.
Heat the oil in a frying pan and gently cook the mushrooms until soft. Add the garlic and shallots and fry for a few minutes until softened. Drain the contents of the pan well on kitchen paper. Allow to cool.
4.
Put the cheese in a bowl and stir in the thyme and mushroom mixture. Season with salt and pepper.
5.
Spoon the mixture into the chicken breast pockets, pressing in well. Secure the openings with cocktail sticks. Place the chicken on the baking tray and cook for 20-25 minutes until the chicken is cooked and the filling is bubbling.
