- 200 grams Chicken cutlet (very thinly sliced)
- 1 scallion
- 4 Cherry tomatoes
- 8 baby Spinach
- 2 Tbsps vegetable oil
- salt
- peppers
- 1 tsp thyme (dried)
- 1 Tbsp white balsamic vinegar
Preparation steps

Cut meat into 1-1.5 cm (approximately 1/2 inch) pieces. Brush with 1 tablespoon oil. Cut scallion into thin rings. Reserve some of the scallion whites for salad and cut remainder into pieces 1-1.5 cm (approximately 1/2 inch) long.

Season chicken with thyme, salt and pepper. Thread chicken pieces on skewers, alternating with scallion pieces. Cook on hot grill along with tomatoes for 3-5 minutes.

Rinse spinach and divide among plates. Add tomatoes and reserved scallions to spinach, place skewers on top and drizzle salad with vinegar and oil. Sprinkle with salt and pepper and serve immediately.
