- 1 tsp Coriander
- 1 Tbsp white Sesame seeds
- 2 Tbsps Avocado oil
- 2 Tbsps Rice wine vinegar
- 2 Tbsps light soy sauce
- 4 small, skinless Chicken breasts (cut into 8 strips)
- 1 ½ cups Arugula
- ½ cup reduced- sugar and salt Ketchup

Preparation steps

Toast the spices and sesame seeds in a dry frying pan set over a moderate heat until hot.

Once the spices are fragrant, grind in a mortar and pestle or in a spice grinder. Combine with the avocado oil, vinegar, and soy sauce in a small bowl.

Coat the chicken strips in the marinade and leave for 15 minutes.
4.
Preheat the grill to hot. Thread the chicken onto the skewers and grill for 8 - 10 minutes, turning occasionally, until golden and cooked through.
5.
Serve on a bed of arugula with ketchup for dipping.
