- 4 Chicken breasts (each about 160 grams)
- 3 Tbsps olive oil
- 200 grams Mozzarella
- 8 Sage
- 8 slices Prosciutto
- salt
- freshly ground peppers
- 100 milliliters dry white wine
- 60 grams Cress (for garnishing)

Preparation steps

Preheat the oven to 200 ° C upper and lower heat.

Rinse chicken breasts, pat dry, cut each in half crosswise. Flatten with a meat pounder. Heat 2 tablespoons of oil in a pan and cook briefly on each side. Remove from pan and place on an oiled baking sheet. Slice mozzarella into slices. Top each chicken breast slice with a slice of Parma ham, sage leaf and about 2 slices of mozzarella. Season with pepper and salt and bake in preheated oven at 200°C (approximately 400°F) for about 8 minutes or until golden brown.

Deglaze pan drippings with white wine and boil down slightly. Rinse and dry cress. Arrange cress on plates, top with chicken saltimbocca and drizzle with sauce. Serve.
