- 400 grams Chicken breasts (without skin)
- 2 large potatoes
- 1 l Chicken broth
- 1 onion
- 1 Zucchini
- 1 green chili pepper
- 1 sprig Lemongrass
- 25 grams butter
- 50 grams thin Rice noodles
- salt
- freshly ground pepper
- 200 grams Cherry tomatoes
- Fresh herbs (for garnish)

Preparation steps
1.
Simmer chicken in a pot with chicken broth for 10 minutes. Then remove chicken from the pot and cut into strips.
2.
Peel potatoes, rinse and cut into cubes.
3.
Peel onion and cut into rings. Rinse zucchini, trim and cut into thin pins.
4.
Rinse chile pepper, trim, remove seeds and dice. Cut bright pieces from lower lemongrass in fine strips, then chop.
5.
Melt butter in a pot, add prepared vegetables and sauté, add chicken broth and simmer for about 15 minutes. Then add glass noodles, stir and cook according to package direction. Add chicken to the pot and season with salt and pepper.
6.
Rinse cherry tomatoes, add to the pot, heat and serve in preheated deep plates garnished with herbs. Serve with white bread if desired.
