- 1 chicken (About 1.2 kg)
- 60 grams Bacon (in slices)
- 8 shallots
- 2 sticks Celery
- 2 carrots
- 200 milliliters chicken stock
- 200 milliliters French Red wine (such as Burgundy)
- 1 garlic clove
- 2 bay leaves
- 2 thyme
- 4 Juniper berries
- salt
- freshly ground peppers
- 150 grams button Mushroom
- 2 Tbsps butter

Preparation steps

Rinse chicken, pat dry and cut into 8 pieces. Cut bacon into strips and heat slowly in a pot over low heat. Remove bacon from the pot. Fry chicken pieces in remaining bacon fat in the pot and then take out of the pot. Peel shallots, celery and carrot. Cut celery and carrots into small cubes. Sauteed prepared vegetables in the pot and also add red wine. Add peeled garlic, bay leaves, thyme, juniper berries and bacon to the pot and season with salt and pepper. Place chicken back in the pot on the vegetables, cover and simmer for about 30 minutes.

Brush mushrooms and sauté in hot butter. Add mushrooms to chicken and simmer covered for another 10 minutes.

Season the sauce to taste and serve.
