- 1 l Chicken broth
- 4 centiliters sherry
- 500 grams mixed Mushrooms (such as chanterelles and shiitakes)
- 3 Tbsps vegetable oil
- 1 garlic clove
- 2 yellow Bell pepper
- 2 Tbsps scallions
- salt
- freshly ground peppers

Preparation steps
1.
Wipe mushrooms clean with paper towels and halve or slice, depending on size.
2.
Peel and finely chop garlic.
3.
Halve peppers, remove seeds and ribs, and cut into thin strips.
4.
Combine chicken broth and sherry in a pan. Bring to a boil.
5.
In batches, sauté mushrooms in hot oil, then add to broth. Add pepper strips and cook 2-3 minutes. Season with salt and pepper and serve soup sprinkled with chives.
