- 2 Tbsps Oil
- 1 Tbsp butter
- ⅔ cup Pancetta (or bacon)
- 1 clove garlic cloves (crushed)
- 1 red chili pepper (deseeded and chopped)
- 2 large Chicken breasts (skinned)
- 2 cups button Mushrooms (whole)
- 1 cup Red wine
- ½ cup Chicken broth (or water)
- 16 ozs Pappardelle noodles
- ⅔ cup black Olives
- 2 Tbsps chopped parsley

Preparation steps
1.
Heat the oil and butter in a large pan and gently cook the pancetta or bacon until the fat starts to run.
2.
Add the garlic and chile pepper, cook for 1 minute then add the chicken and cook for 3 minutes, pulling the meat apart as it begins to cook. Add the mushrooms then pour over the wine and chicken broth.

Season with salt and pepper and simmer gently, stirring from time to time, until the chicken is cooked through.
4.
Meanwhile, cook the pappardelle according to the packet instructions.
5.
Turn the heat up on the chicken pan to reduce the sauce then stir in the olives and parsley.
6.
Stir the pasta into the sauce and heat through then serve immediately.
