75 grams chopped, cooked Chestnuts
50 grams chopped Pecan
300 milliliters Whipped cream
6 Tbsps Chocolate sauce
4 Pecan

Preparation steps

1.

In a bowl, soak the raisins in rum.

2.

Separate the eggs and in a bowl, beat the yolks with the sugar over a hot water bath until thick and frothy. Remove from heat and place the bowl over an ice water bath, stirring occasionally until chilled.

In a bowl, beat the cream until stiff peaks form. In anther bowl, beat the egg whites until stiff.

Line 4 ramekins with plastic wrap. Stir the chestnut puree and into the egg yolk mixture. Then fold the cream, beaten egg whites, the well-drained raisins, chopped chestnuts and chopped pecans into the yolk mixture. Spoon into the ramekins, cover and freeze overnight.

5.

To serve, dip the bottom of the ramekins briefly in hot water. Unmold onto plates, remove the plastic wrap and serve garnished with chocolate sauce and top each with one pecan.
